Paddy explains that with the tunes he teaches he's trying to show you how New Orleans piano works - how you get to its spirit - rather than exactly how you play the notes. He's starting with Junco Partner, a tune that orginated in the Angola jail and which has had numerous classic recordings by the likes of Dr John and James Booker.
